Grilled Corn with Queso Cotija

Servings: 6 | Time: 30 min (15 min prep. + 15 min cook)

Sweet corn, salty Queso Cotija, the zing of zesty lime – this iconic favorite is sure to become the highlight of your backyard cookout!

Directions

  1. Preheat grill to medium-high heat.
  2. Rinse each ear of corn to remove the silk from the cobs. 
  3. Using a basting brush, evenly baste the melted butter onto each ear of corn.
  4. Place the corn on the grill and grill for about 15 minutes or until the kernels start to turn golden brown in color.
  5. When done, remove the corn from the grill. Take the basting brush and lightly baste with remaining butter.
  6. Squeeze fresh lime over the corn and sprinkle salt, fresh ground pepper and chili pepper powder of your choice (optional).
  7. Immediately roll each ear of corn on the plate of grated Queso Cotija, generously coating it with cheese. Enjoy!

Ingredients

  • 8 ounces grated Queso Cotija, sprinkled on a dinner plate.
  • 6 ears fresh sweet corn, husked and silked.
  • 1/2 cup salted butter, melted.
  • 2 fresh limes, quartered.
  • Salt & freshly ground black pepper to taste.
  • Optional: ground cayenne pepper, or ground chili pepper of your choice.
