Cheesy-Chicken Enchiladas!

Servings: 4-6 | Time: 40 mins (20 mins prep. + 20 mins cook)

Easy, Cheesy, Chicken Enchiladas, featuring QUESO QUESADILLA + QUESO FRESCO.

Directions

  1. Preheat oven to 350 degrees. Grease 9 x 13 baking dish.
  2. In a medium bowl, combine 2 cups of shredded chicken with 2 cups of shredded Queso Quesadilla, and ½ cup of chopped onion (optional). Set aside.
  3. In a medium skillet, heat enchilada sauce over medium-low heat, while stirring. When sauce begins to bubble, remove from heat and allow to cool slightly.
  4. To prepare the enchiladas, set up an assembly line to include warmed tortillas, enchilada sauce, Queso Quesadilla/chicken/onion mixture.
  5. One at a time, carefully dip each tortilla into the enchilada sauce, and set on a plate.
  6. Add a generous spoonful of the Queso Quesadilla/chicken/onion mixture in a line, down the center of the tortilla.
  7. Carefully roll up the tortilla and place in greased baking dish, seam side down. Repeat until all tortillas are in the pan.
  8. Spoon remaining sauce over the top of enchiladas. Sprinkle the remaining cup of shredded Queso Quesadilla on top.
  9. Cover baking dish with aluminum foil and place in oven. After 10 minutes, carefully remove aluminum foil and bake uncovered for final 10 minutes. 
  10. Remove from oven. Arrange desired toppings on the enchiladas, sprinkling crumbled Queso Fresco on top (as final garnish). Enjoy!

 

Ingredients

  • 3 cups shredded Queso Quesadilla, set 1 cup aside
  • 1 – 1/2 cups Queso Fresco, crumbled
  • 2 cups shredded chicken, cooked (rotisserie chicken works great)
  • 12 corn or small flour tortillas, heated in microwave (covered, 1-minute)
  • 20 ounces red or green enchilada sauce of your choice (canned or homemade)
  • 1/2 cup chopped onions (optional)
  • Topping ideas: shredded lettuce, chopped cilantro, avocado, Mexican crema (or sour cream), pico de gallo, and/or your favorite salsa.
